Fish Tacos

Ingredients:
4-5 filets of fish (cod, swai, tilapia, halibut, salmon)
**Shrimp is a great addition or substitute
Corn or flour tortillas
4-5 tsp unsalted butter
4-5 tsp olive oil
Seasonings:
1/2 tsp garlic salt
1/2 tsp black pepper
1/2 tsp cayenne pepper
1/2 tsp cumin
1/2 tsp paprika
Toppings and Garnishes:
Crumbled feta cheese
Chopped cilantro
Diced tomato
Cubed avocado (or guacamole)
Chopped red onion
Jalapenos
Coleslaw
Lime juice
Taco Sauce:
1/2 cup light sour cream
1/2 cup light mayonnaise
Juice from one lime
1 tsp garlic powder
1 tsp hot sauce (e.g. Sriracha or Cholula)
Directions:
1. Pre-heat oven to 375 degrees
2. Mix the seasonings together and sprinkle seasoning on both sides of the fish or shrimp
3. Drizzle or spray the olive oil on top of the fish (one side only)
4. Dot a teaspoon of butter on each filet or toss in with the shrimp
5. Bake for 20 minutes then remove immediately. If you are using shrimp, you can bake them or stir-fry on the stovetop for 5-10 minutes on medium heat.
6. Mix the taco sauce ingredients together and taste. Add more salt or hot sauce according to your preference.
7. Assemble your tacos with pieces of fish and/or shrimp, your favorite garnishes, and taco sauce.
**I recommend warming up the tortillas for a minute in the microwave or on the stove
