Lemongrass Ginger Trout


3 trout fillets

2 small stalks of lemongrass, cut into 1-inch pieces

2-inch ginger, peeled & cut into thirds

4 garlic cloves, peeled

2 tbs sweet chili sauce

1 tbs lime juice

1 tsp salt

1 tsp black pepper

2 tbs peanut oil

1 stalk green onions, chopped

3 stalks of cilantro, chopped


  1. Preheat oven 365 degrees F

  2. Wash the trout fillets and pat dry with a paper towel

  3. Blend together the lemongrass, ginger, and garlic until finely minced together

  4. Scoop the lemongrass, ginger, and garlic into a small bowl and add sweet chili sauce, lime juice, salt, and pepper. Mix together.

  5. Brush the skin of the trout with peanut oil and place the trout on a foil-lined baking sheet, skin side down

  6. Spread the lemongrass/ginger mixture evenly on the meat side of the trout

  7. Bake for 20 minutes then turn off the oven

  8. Garnish trout with green onions and cilantro and let it continue to cook in the oven for another 10 minutes

  9. Remove the trout from the oven and serve with your favorite sides
